Charlotte Underwood is a foodways practitioner from LaFollette, Tennessee whose many skills include seed saving, seed sharing, foraging, and canning. Charlotte was born and raised in Campbell County, Tennessee and grew up on a tobacco farm, growing and preserving vegetables as well as raising cattle and pigs. Her family always utilized traditional Appalachian agricultural practices such as planting by the signs, heirloom seed saving, foraging and old-fashioned methods of preserving food. Underwood is excited to continue these family traditions and to have this opportunity to learn more about Appalachian traditional arts while meeting other Appalachian artists.
